Baked Tacos – I Promise You Will Love Them
Mexican food is one of my most favorites to eat. Is it a favorite of yours as well? I have a simple recipe for baked tacos that you are going to love. My family loves the baked tacos. They are just a little bit different than your typical beef taco. This is a great recipe when you don’t have a lot of time to plan for dinner. I always seem to have the ingredients on hand! Remember the post here that I did on dry mixes, well, you can use your taco mix that you made. I used about 2 T. of the mix.
I have one child that doesn’t like cheese, so it’s great that I can add cheese to all the others and leave several for him without cheese. I am serving this up with spanish rice that I made using my rice cooker. For the rice I added 1 1/2 c. of rice, filled with water just below the 2 in my rice cooker pot, added 1/2 c. tomato sauce, 1/2 t. cumin, 1 t. fresh garlic and sprinkled chicken bouillon in to pot. Turned on rice cooker and let it cook. No worrying about if the water is going to overflow all over my stove. I just let the rice cooker do its job. I don’t think you can have too many taco recipes. It’s always nice to be able to change it up every once in a while. I love chicken tacos, pork tacos, beef tacos and fish tacos. I can stuff these tacos full and still have a little meat mixture left over for lunch the next day. I love to eat it with some nacho chips.
