It’s time for a dessert recipe again! This time it’s Chocolate Cream Cheese Cupcakes. I love cream cheese in cupcakes and in banana bread. This is kind of a cheat recipe because you get to use a boxed cake mix, but, I promise you, it’s still really good. I love eating cupcakes because they are the perfect portion. If it were a cake, I might cut it a little too big! I would enjoy eating it, but, I would then ask myself why I ate that much.
- 1 pkg. chocolate cake mix
- 1 egg
- 1 c. semi-sweet chocolate chips
- 1 (8oz.) pkg. cream cheese
- 1/2 c. sugar
- dash of salt
- Mix cake mix according to directions on box. Fill cupcake liners in muffin pan to 1/2 full. Cream the cheese with the sugar and salt; beat in the egg. Stir in chocolate chips. Drop 1 T. of cream cheese mixture over cake mix batter in muffin pan. Bake at 350* for 20 min, or until done.
I had this recipe put together in no time. It was a nice treat to have something a little different than a cupcake with frosting. Don’t get me wrong, I love frosting! Just nice to have something different this time. I will be sending some of these to my daughter’s school tomorrow to give to her teachers. It’s always fun to share treats with others!
It’s also my daughter’s last week of school before Summer. They will be having fun all week long, playing games, eating, having a year end party and we can’t forget 5th Grade Graduation. Yep, this is our last year at an elementary school ever. I have had children attending this elementary school since 1999. It will be very bittersweet. This is where the kid ends and the tween/teen years begin. I’m not sure I’m ready for this. It’s exciting for your kids to grow-up and be more independent, but, wow, when it’s your last child, it’s a little harder. No more bringing in cupcakes for their birthday lunch or eating lunch with them on occasion.
Okay, sadness time is over! It’s time to enjoy these cupcakes. You will want to make these! This cream cheese mixture is very similar to what you would add to brownies when making swirl brownies. Those are so yummy too! I hope you enjoy!
