Oatmeal Peanut Butter Cookies


So Sunday came around like it always does. That meant it was time to make something sweet.  I don’t know what it is about Sundays that make me crave something sweet.  It never fails me though. These oatmeal peanut butter cookies will not let you down.  Of course, I had to add chocolate in there somewhere.  If you’ve been following me, then you know I absolutely love peanut butter and chocolate together.  As always, you have the option of leaving out the chocolate if you are not a big fan.  Chocolate drizzled over the top of these cookies makes it simply delicious.  


Oatmeal Peanut Butter Cookies


  • 1 c. brown sugar, packed
  • 3/4 c. white sugar
  • 1 c. crisco, butter flavored
  • 1 c. peanut butter
  • 2 eggs
  • 1 t. vanilla
  • 1 1/2 c. oats
  • 1 3/4 c. flour
  • 2 t. baking soda
  • 1/2 t. salt


  1. To a mixing bowl add: sugars, peanut butter and crisco. Beat until creamy. Add in eggs and vanilla. In a separate bowl, add flour, baking soda and salt together. Slowly, add into mixing bowl. Mix until well blended. By hand, add oats into mix. Roll into balls and flatten with a fork, criss-cross style. Bake at 350* for 9 minutes. I melted semi-sweet chocolate chips and drizzled them over cookies once they were baked.

I thought I would share my handy little trick when baking with shortening or peanut butter.  To me, it is always a pain trying to clean shortening or peanut butter out of a measuring cup.  So, I use a sandwich baggie to line my measuring cup.  It makes clean-up a breeze.  Voila!
