It’s still quite warm here in Georgia and it will be for a while. But, I was ready for something made with pumpkin. So, I pulled out my go to recipe for Pumpkin Chocolate Chip Cookies. These cookies are soft and more cake-like than your average cookie. I love the smell as it bakes. To be honest, I am kind of ready for a little bit cooler temperatures. We had a very mild winter last year and very rarely did I get to even wear a sweater. I’m ready for the leaves to change to a beautiful red, yellow and orange. Also, totally ready for the mosquitos to disappear. I like to be outside, but I get eaten alive by mosquitos, and who wants to smell like bug spray. Ick! Not me.
I’ve had this recipe for quite some time and not even sure where I got it from. But, it’s a great recipe.
- 1/2 c. butter, room temperature
- 1 c. sugar
- 1 lg. egg
- 1 can (15oz.) pumpkin puree
- 2 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 12 tsp. pumpkin pie spice
- 1 c. chocolate chips
- Cream together sugar and butter. Add in egg and mix. Next add some of the flour mixture and some of the pumpkin puree. Alternate back and forth. Add chocolate chips. Drop by spoonfuls onto baking sheet. Bake at 375* for 15 minutes.
You can see the batter is a little bit wetter than regular cookie dough. That’s why I like to use parchment paper. Believe it or not, I get mine at the Dollar Tree. It works great! Less mess to clean up!
I love the smell of pumpkin pie spice. It would smell so good simmering on the stovetop. I love the month of October and can’t wait to decorate for Halloween. By then, we hope to be in a new house, as we have just put ours under contract. Vintage Halloween decorations are my favorite. I get so excited just thinking about it!
